One of the dishes that have been given much attention is the Filipino Spicy Sweet Potato Shoots, Tomato, and Onion Salad. This dish can be quickly prepared and served during brunch or as an appetizer for lunch or dinner. Also, the preparation is so simple to do; even cooking beginners could give it a try. Clearly, the spices have complemented the flavors of the potato shoots well.
½ cup (sliced in half) grape tomatoes
3-4 cups (blanched, drained and cooled) sweet potatoes
1/3 cup sliced red onion
1 lime or lemon juice
¼ teaspoon lime or lemon zest
½-1 tablespoon fish sauce
1 (mince ) garlic clove,
1 (thinly sliced) Thai chili pepper,
1 tablespoon vegetable oil
- In a large bowl, mix the following: red onions, pepper, lemon or the lime juice, salt, fish sauce, zest, chili pepper and garlic. For about 5 to10 minutes, marinate the mixture.
- Prepare the sweet potato shoots. Pour the tomato together with the onion mixture on them and toss well to evenly spread out the taste. Add seasoning as preferred.
- Get the oil and drizzle the shoots.
The Filipino Spicy Sweet Potato Shoots, Tomato and Onion Salad is a good main dish alternative during lunch and dinner. It should be noted that the spice of the dish could be adjusted by reducing the peppers. Filipinos would truly love the spicy kick of the dish.
